Captain America and Thor both wield Mjolnir in Avengers: Endgame, but they don't catch the mighty hammer the same way. Even though Mjolnir is Thor's weapon, he and Steve have a history with it in the Marvel Cinematic Universe. Avengers: Age of Ultron saw Steve budge Mjolnir, but it appeared the chance for him to use it passed as Mjolnir was destroyed in Thor: Ragnarok by Hela. However, the time travel nature of Avengers: Endgame allowed it to return.
The return of Mjolnir allowed Avengers: Endgame to explore the worthiness of Captain America and Thor again. For Thor, he thought that he might no longer be worthy of picking up the hammer. But when he went back to Asgard in 2013, Thor discovered that he was still worthy as Mjolnir flew into his outreached arm. Proof of Captain America's worthiness came much later in the film. While Thanos was busy fighting Thor, Captain America picked Mjolnir up off the ground and used it to fight the Mad Titan himself. Captain America can do just about anything Thor can with the hammer, but they don't catch it the same.
The difference between how Captain America and Thor catch Mjolnir in Avengers: Endgame is small, but it is an intriguing detail. As pointed out by u/Moohamin12 on Reddit, every time that Captain America catches Mjolnir in the movie, he recoils his arm to help him stop the hammer. However, Thor never recoils his arm to grab the hammer and instead holds his hand completely outstretched. The proposed explanation is that Captain America is used to recoiling his arm to catch his shield, while Thor knows that Mjolnir will stop directly at his hand. But, there could be further explanations.
Beyond Thor's knowledge of how Mjolnir works and the hundreds of years of experience he has with the weapon, his strength could be a contributing factor. As an Asgardian and the god of thunder, Thor is incredibly strong. Captain America might be a super soldier with super strength, but Thor is still believed to be stronger. Even though physical strength has nothing to do with lifting Mjolnir, it could still play a factor in catching the object. It's also possible that the strength and Captain America's reflexive recoil from his shield both played a part in why he catches Mjolnir differently than Thor.
Since Captain America is the only other person to catch Mjolnir mid-flight in the MCU, future in-universe content could reveal more about the differences. There are plenty of theories that Mjolnir will return in Thor: Love and Thunder as part of the Mighty Thor storyline, so it is possible that Jane Foster could provide some answers. If she catches the hammer just like Thor, then Captain America's recoil in Avengers: Endgame could be confirmed as only a tendency of his. But, if Jane catches Mjolnir like Cap, then it could prove that the strength of Asgardians is why anyone else can't catch the hammer without some recoil.
