Based on a scene in Star Wars: The Rise of Skywalker, it would seem that Ahsoka Tano eventually did learn that Anakin found some form of redemption at the end of his life. In Return of the Jedi, Darth Vader betrayed the Empire and contributed to Luke Skywalker’s victory over Emperor Palpatine before his death, something Ahsoka would've found out about either in the years between the original and sequel trilogies, or in The Rise of Skywalker itself.
Many years after his demise, Anakin received a voice cameo in The Rise of Skywalker. While losing the final showdown with Darth Sidious, Rey began to hear the voices of several Jedi through the Force, urging her to gather her strength and bring back the balance in the Force. Hayden Christensen, who played Anakin in the Star Wars prequel trilogy, can be heard saying, “Bring back the balance, Rey, as I did” and “the Force surrounds you, Rey.” Another Jedi who speaks to Rey in this moment is Ahsoka Tano, who at the time of the film had never appeared in live-action. Ashley Eckstein, the voice actress for Ahsoka in Star Wars: The Clone Wars and Star Wars Rebels, reprised her role to simply say the word “Rey.”
Ahsoka and Anakin were joined by the voices of numerous other characters associated with the Jedi, including Obi-Wan Kenobi, Qui-Gon Jinn, Mace Windu, Yoda, and more. Basically what happened in this scene is all these Jedi came together as one large collective through the Force to reach Rey. Taking this into consideration, it seems plausible that while the Jedi were all joining together, their minds may have been linked. If that’s the case, Ahsoka could have become aware of how Darth Vader’s story truly ended.
Finding out about his pivotal decision in Return of the Jedi naturally would have meant a lot to Ahsoka. In Clone Wars, she was his loyal apprentice. As a young and idealistic Padawan, Ahsoka held her master in high regard, and understandably would have been disgusted by his actions in Star Wars: Episode III – Revenge of the Sith if she had witnessed them first-hand. Later, she learned about his transformation into Darth Vader and was naturally disappointed by the revelation. Her thoughts on his turn to the dark side were revealed in Star Wars Rebels, which featured their reunion. It took her some time to accept what Anakin had become.
Played by Rosario Dawson, Ahsoka briefly brought up Anakin during her guest appearance on The Mandalorian when she talked about how emotional attachments can ruin “the best of us.” She was, of course, referring to the lengths Anakin went to because of his emotions, particularly his love for Padme. Though she was right about Anakin allowing his weaknesses to corrupt him, she surely would have been consoled by the fact that her former master ultimately did the right thing when the battle with Darth Sidious reached its conclusion. If she didn’t already know the truth at this point, it’s quite possible that she felt Anakin’s change of heart through the Force in Star Wars: The Rise of Skywalker.
